Is there a simple way to change the Double-Click message behaviour to open a message to a single click.... and add an extra "select" column ala gmail?

Yes, you need to alter the Javascript and possibly some HTML. Very simple, as you don't need to mess with the PHP code

Can anyone help me do this? I'm a new user, and not a programmer. I can't use Roundcube on my iPod Touch because double-clicking isn't supported. This is the only hurdle keeping RC from being my only mail client.

I can confirm the default "double click" feature being incompatible with the iPhone 1.1.1 embedded browser.

Double click and touch screen

Double click is not good with the touch screens.
With the proliferation of tablets and smartphones, it would be nice to have an alternative. :)
