I successfully have Roundcube working on a GoDaddy shared host without IMAP support. To do this, I am using Google Apps as a go-between to add IMAP capability.
Start with this tutorial to use Google Apps to add IMAP support to your GoDaddy email:

Next, install and configure Roundcube using GMail's IMAP settings:

I am using PHP's mail() function to send instead of SMTP.
