Where do I find information about creating themes.  There's just not that may themes available.

There isn't much available yet. What you can do is download and analyse the current themes and create (or rebuild one) to make your own.

Some themes are available in the download section (http://www.roundcubeforum.net/dlcat-themes-skins-1/), others only in the forum (http://www.roundcubeforum.net/theme-releases/).

Documentation for plugins and skins is planned for version 0.3-beta.
