The emails from one single contact keep getting into the SPAM folder in Roundcube.
How do I mark them as NOT SPAM so that in the future that doesn't happpen again?

Roundcube doesn't provided spam filtering, you need to change the spam setting on the mail server.

I can't really give you any directions since every mail server is different, I'd suggest you ask your email provider for help.
