I have had a lot of trouble with roundcube. Emails not being delivered, every time I have a back and forth with someone, new files AREN'T delivered unless I ask for an entirely new email. And I can't figure out how to change my signature! Can someone pleeeease help me?

Roundcube is a mail client. It does not perform the delivery of email, that is done by your email provider.
To edit your signature you need to go to Settings and then Identities. See http://docs.roundcube.net/doc/help/1.1/en_US/settings/identities.html#signature
