While I know it is not really secure. Is there a way for me to have password and password changes stored somewhere in clean text?

Why? For use inside RoundCube or outside of RoundCube?

I'm setting up roubdcube to be used in a family setting, and we would like to know the passwords of our kids in case they change it.

You'd have to setup a plugin to store the password when they logged in, I think that would be the easiest way to do it.

you may want to use the impersonate plugin. It wont store passwords in clear text. however it will allow an admin to log into a users account (for troubleshooting purposes) this may still provide what you are looking for
