Like the subject says.. SpamAssassin milter will put "[SPAM]" in the beginning of the subject, I want that to automatically go in the user's spam or "Junk" folder, how?

Should be done IMAP server side. IMO, it is not a job for RoundCube.
Reason: If this feature is present in RoundCube it would move message as required. But if you access the account by a desktop client (OE, Thunderbird, etc.) you will have to setup an according rule there for this job as well.
Look into managesieve (I'm not too familiar with it) or hMailserver rules (that is what I'm using).

We use Procmail as a delivery agent, it is fairly easy to build this into the default .procmailrc rules.

I'd be quite interested to now if there is any intention of making an hMailServer plugin to be able to access the server side rules, like the other great hMailServer plugins...
Cheers
