Maybe I'm missing something here, but I can't see any way to create/rename IMAP folders through roundcube. Looking at the changelog they seem to indicate that the capability is there.
I'm running v0.1-beta2.

After you log in to RC click on "Personal Settings" in the upper right corner. Then click the "Folders" tab.
At the bottom of the page you can create folders.
It appears you can only rename folders that you create. After you have created folders, there should be a little icon next the subscribed check box that will allow you to edit the folder name.

It would be a little more natural to have it built directly into the folder view don't you think! Nontheless, loving Roundcube!
