Maybe I m tired of looking,

but when I forward a mail, or write a mail and then I will fill in another mail, i cannot find the adressbokk to fill in, bc when I press addressbook, the mail is disappeard

so my question is, how can I fill an emailaddresses, after writing the mail?

Just start typing the contact's name in the Recipient field, and a list should pop up with matching names and emails for each contact. You can then keep typing or just click on the contact's name to add them.
