I have ascertained from previous discussions that RC does not have an out of office function but squirrel does.

I also saw that people have been migrating from Squirrel to RC.

We use United Hosting and can hop between RC and Squirel so would the solution be to set the out of office reply up in Squirrel?

RoundCube supports out of office functionally for some backends with a plugin. If your host uses something like cPanel you should be able to setup the out of office functionally in the control panel.
