Need help with a rebuild after a hack

We have an old server that got hacked and was sending out spam. I need to build a new server with an up-to-date installation but I have no idea what files I need to save and/or how to copy them over to the new server. I'm sure there's some gotcha between versions.

Current (disconnected) server is running:

FreeBSD 7.2
Apache 2.2
MySQL 5.0.90
PHP 5.2.12_2
Roundcube 0.3.1

Once I get a new server built with up-to-date software what needs to be done to make sure I get all of the proper configs moved over?

You may want to hire someone with server experience to help you get the new server setup, there has been a lot of changes between the old versions and the current versions so your not going to be able to simply copy the config files over your going to have to re-configure the software.

I was afraid of that. Hiring someone is highly unlikely to be an option. Any advice on how to proceed?
