Timezones not saving (from users settings)

I just installed roundcube (the latest stable one) in most basic form (following all the steps...)

Installation went really smoothly, but when i login and try to change the timezone settings a popup comes up and says its saved, but it doesnt actually save and just reverts to (Auto)...

By no means am I super technical, so I might have just done something wrong - but I dont think I have.....

Any help would be great...
