Where is the documentation on the round cube config file?

Is there a user override?

I am on a shared host and the date is being displayed as dd.mm.yyyy
I would like it displayed as mm.dd.yyyy

Checkout Roundcube Webmail for documentation to change the date edit the $rcmail_config['date_long'] in /config/main.inc.php

It is unlikely that I will be able to edit it because I am on a shared host.

You wouldn't be able to edit it if you don't have access, you could do your own install of RoundCube just download it form Roundcube - Free webmail for the masses and install it.
