Hello Roundcube world

I am brand new with roundcube and wanted to see if I might be able to get some help here.  I installed roundcube a few minutes ago to Roundcube Webmail :: Welcome to Roundcube Webmail.  

I dont like the basic theme and wanted to get something that looked more like outlook, and yahoo mail in terms of layout.  I downloaded a ton of themes but dont know where to upload the files to.

Also I installed it via a simplescripts program at hostmonster.com.  I know there are several files I should be deleting for security issues.  I am reading: Howto_Install

but I'm not sure how to do what it tells me to.  I have access to the ftp folder and am looking at the info.  What I'd like to know for now are:

- how to change themes
- how to configure my roundcube email so that it's secure.  After I have the theme I'd like, I will mess around with it until I am comfortable with it.  
- Are there any plugins that people would recommend?
